1 ½ cups of The Kind Harvest Co. Plain Flour
1/3 cup granulated sugar
¼ cup packed brown sugar
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon salt
2 large eggs, lightly beaten
½ cup unsalted butter, melted & slightly cooled
½ cup milk
1 teaspoon vanilla extract
1 cup of chocolate chips
Preheat oven to 190C and lightly grease or line 12 muffin cups
Mix together the flour, sugar, brown sugar, baking powder, baking soda, cinnamon and salt.
Make a well in the centre of the dry ingredients and add the eggs, melted butter, milk and vanilla extract. Mix until combined, but don’t over mix.
Add chocolate chips and stir.
Pour mix into the muffin cups (2/3 full)
Bake for 20-22 minutes or until a toothpick is clean after insertion into a muffin.
