Marbled Chocolate Banana Bread





Serves: 9-10 Prep time: 15min Cook time: 50-60min


Ingredients:


  • 2 ¾ cup (320g) The Kind Harvest Co. Plain Flour

  • 4 (460g) large, ripe bananas

  • ¾ cup (153g) coconut oil 

  •  3 large (152g) whole eggs 

  • ½ cup (133g) brown sugar 

  • ½ cup (133g) raw sugar

  • 2 tsp (8g) vanilla extract 

  • 1 tsp (7g) baking soda

  • 1 ¼ tsp (5g) baking powder

  • ½ tsp (4g) table salt 

  • 1 cup (160g) dark chocolate chips 

  • 2 tsp (8g) raw sugar, for topping

  • 2 tsp (9g) sea salt, for topping 


Method:


  1. Preheat oven to 160℃ (fan forced)/ 180℃ (convection). Line 23cm x 23cm x 4.5cm baking tray with baking paper, set aside. 

  2. In a large bowl, melt coconut oil in the microwave for 30-40 seconds, cool slightly then add in eggs, brown, raw sugar, vanilla, and bananas. Mix well. 

  3. In a separate bowl, mix flour, baking soda, baking powder, and salt. Add into wet mix and stir together till well incorporated, do not overmix!

  4. In a microwave safe bowl, melt chocolate chips for 40 seconds, then stir. Repeat steps till chocolate is fully melted. Transfer half a portion of the batter into the chocolate mixture, folding with a spatula till evenly mixed. 

  5. Place dollops of the two-coloured batters randomly over the lined baking tray, then use a butter knife to partially mix the two batters together to create marble effects. 

  6. Sprinkle raw sugar and sea salt over the top. Bake in the center of the oven for 50-60 minutes or until when a toothpick inserted in the centre comes out clean. 

  7. Serve and enjoy!
