5 cups The Kind Harvest Plain Flour
2.5 cups warm water
2 teaspoons yeast
1 teaspoon honey
Olive oil
Salt
Garlic
2-3 rosemary sprigs
10-15 cherry tomatoes
Mix yeast, honey and water together in a bowl, mix well together, cover and set aside to bloom, when it’s bubbly on the top.
Put the flour into a large bowl and make a well in the centre and pour in the yeast water, mix together until it’s a wet batter, place it into a large bowl that has about 1/2 cup of olive oil in the bottom and cover and set aside to double in size. The time will depend on the temperature of the room, it’s the size you’re looking for!
Once it’s doubled, on a sheet pan lined with baking paper, pour olive oil on the base then pour the dough into the pan and using your fingers make dents in the dough and then drizzle more oil, sprinkle chopped garlic, push in the tomatoes and then cover with rosemary and lots of salt!
Let it rest for about 30min then bake at 175-180 degrees for about 25-30 min or until golden brown!
